See what I did there? Mushies have become a real favourite of mine having scoured the local markets looking for inspiration. There are so many varieties to choose from and they all add a different dimension to your cooking weather you're seeking depth of flavour, textural contrast or both. These have simply been roasted in the oven prior to being added to a slow cooked Osso Buco. Another idea is to heat in a pan with some olive oil, a touch of butter and some fresh thyme leaves.
