Bone In Rib-Eye with Ensalada Criolla

Boy, can the Argentinians make a cracker of a BBQ. I hope to get there one day, but in the meantime, I’ve been enjoying some great Argentinian restaurants here in Aus. We are blessed with such a diverse food scene that inspiration can be found wherever we look.

Red meat is high on the agenda and is famous for its quality in South America. We raise incredible beef here in Australia and it deserves to be celebrated. This my salute to our Aussie beef farmers using some of that South American influence. This large cut of meat called for a punchy, refreshing side. The Ensalada Criolla is made with fresh tomatoes, onions, capsicum, and hint of chilli.

By finely dicing the ingredients (and I mean finely dicing them), you get a wonderfully refreshing mouth feel.
