Another ingredient that provides me with tremendous versatility in the kitchen is beetroot. They come in various colours and sizes and can be used across many aspects of cooking. Target Beetroot have wonderfully colourful rings and when sliced thinly can be eaten raw in fresh salads. You can't go wrong with pickled beetroot either but sweetness isn't always associated with vegetable. Peel and juice your beetroot then reduce the liquid over a low heat. This creates the most sweet and delicious syrup that can be drizzled over salads or even to colour and sweeten cream when serving a dessert.
