Asparagus and Capsicum Frittata

I seem to love the word versatility at the moment and the epitome of this is Frittata. You can put whatever you like in yours and encourage you to play around with your ingredients as much as you dare. If you stick with what's in season you will generally get a positive outcome. I try to incorporate a couple of different cheeses into my mix to add flavour. Here I used feta and some grated aged cheddar in the mix then finished with some Parmesan.
